Founded in 1993 by Amy Wesselman and David Autrey, Westrey is a core producer in the Dundee Hills. They are farmers, first and foremost. They’re not bombastic enough to chase points or the ephemeral fame of trendy styles. Instead, they live their time-tested values. They prize sustainability, sourcing exclusively organic or LIVE-certified vineyards. Their fruit is all dry-farmed, too, because they believe it produces “better wines and respects the scarcity of water.” Their estate vineyard, Oracle, was originally planted in 1977 and revived, quite literally, by Amy and David after they purchased the property in 2000.
 
Their style is classic Oregon, partly because so much of their wine is held back before release. Maybe it’s because the wines speak quietly of place and time, evocative in their hushed tones.
 
Like Westrey, Pierre Bourée et Fils is a household name among winemakers but less so among the general population. In the venerable village of Gevrey-Chambertin, they are a historic and noteworthy producer. The estate dates back to the mid-19th century. More recently, Pierre Bourée has grown its profile through shrewd purchases, including the acquisition of Clos de la Justice (a monopole), as well as a small plot within the Premier Cru vineyard Les Champeaux.
 
Currently run by Brothers Bernard and Jean-Christophe Vallet, intervention in the vineyard is limited to pruning in the spring and organic compost for fertilizer. Just like their cult neighbor Domaine Dujac, the reds are vinified entirely with whole clusters in foudre and raised in oak for two years. New oak is only used to retire barrels too old for production, allowing for the full character of their winemaking practices to be seen.
 
Fiercely traditional in approach, Bourée’s wines are a throwback to a time when cellaring was an expectation, not a luxury. These are not wines intended for early drinking. Instead, they reward patience, something of a lost art in today’s purchase and pop wine culture. With adequate time Bourée’s wines evolve from rustic and esoteric, to silky and timeless. Think something akin to Rousseau, but vinified by Dujac, if perhaps a little less concentrated. These are wines for an unabashed Burgundian palate.

Champagne of the Day:

Tarlant Zero Champagne
 
If you haven’t heard of Champagne Tarlant, maybe your ancestors had. Founded in 1687 and passed down from generation to generation ever since, Tarlant is a household name in Epernay. The family grows 35 acres (with four crus in their portfolio) of the usual-suspect Champagne varieties, plus such grapes as Arbanne and Petit Meslier. After the crush in a traditional-style, round wooden press, each vineyard plot is vinified separately, in oak or stainless steel, and then raised in barrel. The Tarlant family does the blending, and likes its Champagne dry, so the wines are mostly undosed. This is classically pure Champagne, of deep-rooted descent that stood out in a recent tasting as one of the finest examples of Brut Nature Champagne.
