Hundred Suns ‘Old Eight Cut’ Pinot Noir, Willamette Valley 2021 750ml $33 special, 31 bottles in stock
Winery note “Tasting Notes: Fresh Rainier cherries and vibrant strawberry form a juicy mid-palette wrapped with layers of tea leaf, citrus rind, and complex spice. Beautifully balanced acid and structure make this wine punch way above its pay grade. 2021 Vintage & Vintification: This cellar selection stitches together pieces from unique sites across the Willamette Valley. Lots are fermented with native yeast & a variety of traditional & experimental techniques to create a layered wine of great complexity, but that is, first and foremost, totally delicious. 2021 started with below-average rains, leading into a warm spring and early bud break. Moderate yields and a warm summer gave us perfectly ripe flavors from our collection of dry-farmed vineyards. Picking started September 10th and finished October 2nd. Fermented with indigenous yeast and 30% whole cluster. This wine will drink best from 2023-2028.”
Hundred Suns Syrah, Columbia Gorge 2019 750ml $44 special, 29 bottles in stock
Winery note “Reminiscent of wines from the northern Rhone in its complexity and structure. Initial aromas of flint and molasses give way to Asian plum, espresso, and hoisin. Vineyard: 2019 was a long growing season with moderate but dry days and cool nights blowing from the vast Columbia River. We were lucky to secure 1.5 tons of mixed clone Syrah from the Three Sleeps Vineyard located in Oregon’s Columbia Gorge AVA. This windswept vineyard located outside the town of Mosier consists of silty clay soils over basalt rocks formed from eons of floods, glacial movement, and volcanic activity. Planted in 2002 by Patrick Reuter and Leigh Bartholomew, it is farmed organically. Winemaking: 100% whole bunches were placed in an open-top fermenter and a 500 liter amphora and allowed to ferment untouched for ten days. Then, we foot stomped the clusters to release the dark juice from inside. After three days of maceracion the grapes were pressed to stainless steel where they finished primary fermentation. The wines were aged in a combination of terracotta and seasoned French oak. After 10 months they were racked to all neutral oak and left to age for an additional seven months. Bottled unfined and unfiltered in March of 2021.”

Winery note “Old Eight Cut: A diamond cut dating back to the 1400s using simple tools and few cuts to enhance the natural brilliance of the stone without disguising its true nature. Layers of brioche, pear, and lemon bar with delicate richness and tense acidity. Winemaking: 2021 started with a warm spring and early bud break. Warm summer temperatures led into a cooler fall, and we harvested our collection of dry farmed vineyards starting on September 9th and finished the 12th. Grapes were pressed into French oak and fermented with indigenous yeast.”

Vinous 90 points “The 2019 Chinon Le Domaine provides excellent concentration of fruit while remaining light on its feet. As well as bright primary fruit, it offers smoky bacon, spice and medicinal characters. There’s lovely sappy texture on the finish, which Baudry puts down to the limestone soils of the Chinon plateau that typically grip the side of the mouth. You can enjoy this in its youth, but it has an additional element of seriousness that means its future will stretch out to the medium term.”

Vinification: Whole clusters of grapes are fermented, and then macerated for six days to extract characters of fruit and finesse. The grapes are gently pressed producing a beautiful light pink color and vinification takes place in stainless steel tanks at moderate temperatures to reduce malolactic fermentation. Fresh citrus and a stony-chalky undertone take the lead on a silken-textured palate but with almost electrically charged vivacity of interaction emerging in the long, saliva-liberating finish, mirroring the wine’s remarkable aromatic show. This will be at least a twenty year keeper worthy of comparison with such memorable past vintages as 1988, 1990, or 1996, each of which has shown gloriously when tasted within the past couple of years”.

John Gilman 94+ points “This is the exact same blend as the Cumières non-vintage bottling from the base year of 2015 that was released without any vintage-dating on the label in regular-sized bottles two years ago, but the magnums (and jeroboams for those so disposed) were aged an additional two years sur latte and hence are labeled with the vintage date on the front label. The larger-sized formats are also non-dosé. This magnum was disgorged at the end of November of 2019 and offers up a superb nose of apple, discreet tangerine, hazelnut, excellent minerality, a hint of iodine, warm bread, gentle smokiness, acacia blossoms and a whisper of oak (with most of this having been subsumed into the other aromatics). On the palate the wine is pure, racy and full-bodied, with a rock solid core, great delineation and mineral drive, refined mousse and absolutely stellar backend lift, grip and length. When this was first released, Vincent Laval was convinced it was one of the finest vintages of his Cumières bottling in many years, and drinking it now out of magnum with more time on the fine lees, it is awfully easy to agree with him! The extra few years aging sur latte have allowed the fine girdle of acidity to relax here nicely and this wine is now drinking really quite well out of magnum (and probably regular-sized bottles as well), but my bottles are staying put in the cellar for at least another five years! 2020-2055.”
