The nose does not transmit any heat whatsoever, showing notes of chamomile, beeswax, honey and aromatic herbs. The palate is sharp, medium-bodied with great acidity and freshness that is both clean and persistent; it is more austere than exuberant, which was a real surprise. Overall, it is tasty and supple. Domaine Servin
Estates of Chablis
Domaine Servin is one of the oldest and largest estates in the region, with 32 hectares of vines spread throughout Chablis and much of it in top vineyards. The Servin family has been in the Chablis region since 1654 and involved in the wine industry for much of that time. Today, Francois Servin runs the domaine with the assistance of his Australian brother-in-law, Mark Cameron.François, while appreciating the great traditions that are very important to the Servin family, strives to modernize and improve the estate. He has resumed hand harvesting of grapes over most of the Premier Cru and all of the Grand Cru vineyards. Where necessary, he has replanted with improved Chardonnay vines. The wines are aged in a mix of stainless steel and wooden barrel, depending on the cuvee, and bottled without filtration.

With a long history in Chablis, Domaine Servin owns some great parcels through the area, including Grand and Premier Crus. Remarkably approachable in their youth, Servin’s wines are enjoyed for their well-balanced minerality and fresh fruit, outstanding values from Chablis!

It perhaps lacks Chablis typicité, but you’ll still polish off a bottle without a murmur of complaint.”

There are violets, plums, dark cherries and something earthy. This is slightly riper than the 2013. It all began in 1958, and the project linked the efforts of nineteen small winegrowers to collectively make quality wines at a living wage while ensuring each of the growers could maintain control of their land. This undertaking has grown to include 52 members who occupy over 100 hectares, producing a Barbaresco DOCG from a blend of their vineyards and nine single-vineyard cuvees in exceptional years from premier vineyards: Asili, Montefico, Montestefano, Muncagota, Ovello, Pajè, Pora, Rabajà, and Rio Sordo. Aldo Vacca is the current director of Produttori (and the cousin of Renato Vacca, winemaker and owner of the Cantina del Pino).Produttori del Barbaresco is revered for its commitment to quality and transparent winemaking, producing classically-styled Barbaresco and Riservas that allow a rare chance to taste the true terroir of each vineyard site. The grape growers are paid based on the quality of their grapes instead of quantity, which helps provide financial incentive to grow the best possible grapes and to harvest at the optimal time for each parcel.

The aim of Produttori has been to communicate the individual terroir of a given place from vintage to vintage; prolonged aging and traditional winemaking has lent the domaine a reputation for both consistency and quality. The close proximity of the vineyard to the Tanaro River results in a warm microclimate that ripens the fruit earlier than elsewhere. In 2008, though, the Pora packs a serious punch. The 2012 Barbarescos in general are more open and ready to drink, according to Antonio Galloni.  Yet the 2012 release from Produttori del Barbaresco offers a greater promise of structure and longevity than many; in 2012 the famed 9 cru riservas from Produttori were, well, not reserved. They are all here blended in this $28 Barbaresco.  Produttori’s leader, Aldo Vacca, shows a consistent attention to quality over quick profit and has steadily modernized only where necessary.  His long term view could be the key to the continued success in even more challenging vintages.

From Decanter Magazine: “As a graduate student in viticulture and oenology at UC Davis, (Christian) Moueix worked the 1968 harvest at Beaulieu Vineyards in Rutherford. Fourteen years later, he established Dominus Estate down the road in Yountville. So Ulysses, his new Napa Valley project which debuts in March, is only the latest chapter in a long story. Moueix had always been intrigued by the potential of southern Oakville’s terroirs, so when the Schmidt Ranch came onto the market in 2008, he jumped at the chance to acquire it. The property, renamed Ulysses, sits on an alluvial fan, revealing similar soils to the better-drained western part of Dominus’ Napanook vineyard. But climactically the site is very different. Here, the cooling influence of the San Pablo Bay is mitigated by the Yountville hills, so summer temperatures at Ulysses can be as much as four degrees Fahrenheit warmer. “The 2007 Viña Cubillo Crianza is the most affordable red. It is a wine that was born to go with tapas and to be sold at local restaurants showing a combination of fruit and the earth where the vines grow. It is a blend of the usual 70% Tempranillo, 20% Garnacho, 5% Graciano and 5% Mazuelo fermented in old oak vats with natural yeasts and matured in barrel for three years. The intoxicating nose shows blood orange, bitter cherries, leather and spices in a subtle and balanced way. The palate is sinewy, polished, has good acidity and is not terribly complex nor powerful, but is built more on the subtlety and lightness.This could well be the best Cubillo of recent times.”

Domaine Rene Leclerc was founded in 1962 and is owned and run by Rene and his son, Francois.  Their passion is for wine of purity and balance, a hands-off style that allows the fruit to fully express the magnificent terroir of the region.  The wines undergo cold soaks before a light and short pressing to extract only the best juice.  What follows is a long, traditional fermentation in stainless steel tanks with natural yeasts.  The Griotte Chambertin, their only Grand Cru bottling, is aged in vat for six months and then for 1 year in 50% new French oak.  It is an excellent candidate for long term cellaring, a serious wine that expresses notes of red and black berries, chocolate, game and spice as it opens in the glass.  The Domaine owns 9.5 hectares of vines and works the Griottes vineyard portion (the portion being owned by Domaine des Chezeaux) and leased to R. Leclerc long term or ‘en fermage’).

Proprietors Ben Smith and Gaye McNutt are former aviation/tech workers whose love for wine inspired them to create their beautiful Bordeaux-style blends. Cadence sources fruit from Red Mountain AVA vineyards such as Ciel du Cheval, Tapteil, and their estate vineyard, Cara Mia. “Bright ruby-red. Red berries, cocoa powder and licorice on the nose. Tightly wound and youthfully imploded, conveying an impression of density without weight. Dark fruit and mineral flavors show terrific lift but are extremely backward in the early going. “Drink this with a big steak or hold it for four years,” suggests Ben Smith, adding that the 1999 Tapteil is great right now. Finishes with a firm tannic spine and outstanding subtle length and lift. This wine was aged in 40% new oak and was racked a total of just three times. Incidentally, I also got an early look at the 2013 Tapteil, and that impressively intense wine may need even longer aging than the ’12, due in part to its higher percentage of Cabernet Sauvignon.”
Wine Advocate 93 points “The 2012 Tapteil Vineyard is elegant and complex, with lots of minerality in its red plums, blueberry and floral bouquet. Full-bodied, mouth filling, layered and pure, with lots of tannin on the mid-palate and finish, it needs short-term cellaring and will be another 2012 from Ben that will see its 20th birthday in fine form. The blend here is 56% Cabernet Sauvignon, 25% Merlot and 19% Cabernet Franc, all of which spent 18 months in 40% new French oak.”
