Call it The New Oregon Wine if you want to be punchy and memorable, but honestly, the key is patience and observation. There is great power in these wines, but also sensitivity. He started Tan Fruit to “experiment and play around with technique” and maintains a patient, minimalist approach. He prefers picking the grapes early (“al dente” he calls it), aging in a combination of steel and oak, and to ferment bone dry.
