Chablis:

Three Day Sale Starts Now!
Classically, Chablis is a crisp, clean white Burgundy, made from Chardonnay vines grown in extremely chalky, limestone soil. With a unique soil composition and a plethora of exceptional sites, Chablis is an essential item for anyone’s cellar. Given the cooler growing season, the wines are more angular than the Côte-d’Or. But for sheer terroir-infused bang for your buck, they’re impossible to beat.
With a tremendous amount of variance in terms of flavor expression, the best Chablis are characterized by their high acids, pervasive minerality and a fruit profile that tends to skew towards citrus and orchard fruit. As they age, the mineral and tertiary characters of the wines blossom, with the best examples having decades of potential bottle age.
Chablis became so popular in the 20th century that its good name was co-opted, most notably by big California jug wine producers. This legacy has left us with our current state: a once famous wine region, still beloved by a modest group of devotees, is now too often overlooked.
Today we’re featuring a number of terrific options that represent everything we love about the region’s wines on our special, three-day sale. So, stock up on this perfect summer white, and (re)discover what makes Chablis so timeless.

Domaine Daniel-Etienne Defaix Chablis Vieilles Vignes 2020 750ml Displayed Price: $39, that’s $37.05 at 5% off and $35.10 at 10% off, 18 bottles in stock now
Winemaker Notes “This cuvée is sourced from vines the age of which is between 45 and 70 years. A wine of exceptional concentration for a village level appellation, this wine is always a true expression of the kimmeridgian soils that make Chablis so distinctive. Aged for thirty months before release, Defaix’s old vines Chablis is richly dense with a classic pierre a fusil bouquet and long mineral-infused finish.”
This is the lowest listed price on the West Coast!
Experience aged Chablis like no other: this 2010 is a current release from the winery’s cellar.
Domaine Daniel-Etienne Defaix Cote de Lechet, Chablis Premier Cru 2010 750ml Displayed Price: $59, that’s $56.05 at 5% off and $53.10 at 10% off, 13 bottles in stock now
Winery Notes “In fascinating contrast to “Vaillon”, Defaix’s “Côte de Lechet” is a master class in mineral precision. This remarkably steep site (a 45% gradient) with very poor soil produces a wine that Danny describes as embodying “the real, true mineral expression of Chablis.” Freshly blasted chalk dominates the nose, with notes of lemon, honey, and fresh herbs lurking underneath; still, this is a wine of minerality first and foremost. The family owns a 3.5-hectare parcel of 45-year-old vines in this distinctive cru, most of which are planted within a parcel known as the Clos des Moines.”
Albert Bichot Domaine Long-Depaquit Blanchot, Chablis Grand Cru 2018 750ml Displayed Price: $89, that’s $84.55 at 5% off and $80.10 at 10% off, 4 bottles in stock now
Wine Enthusiast 96 points “This wine’s nose opens with subtle apple freshness followed by lemon brightness. The palate immediately shows rounded, chalky depth, filling the mouth with chalky yeastiness that is brightened and cooled by lemon. The heat of 2018 is well managed in this elegant wine, expressed in juicy ease but anchored in cooling depth, with a subtle whisper of oak. Drink 2025–2040. -Anne Krebiehl MW”

Decanter 90 points “A fresh example, with appealing floral notes and purity on the palate. An early-drinking but classy Petit Chablis. Decanter 90 points “Reticent lime nose. The palate has a rich attack, and is firm and concentrated. It shows impressive depth and weight of fruit for a village wine, with density and some chewiness. Textured and long.”

Lucien Le Moine Preuses, Chablis Grand Cru 2016 1.5L Displayed Price: $379, that’s $360.05 at 5% off and $341.10 at 10% off, 1 magnum in stock now
Stephen Tanzer-Vinous 92-95 points “Musky scents of citrus fruits, gardenia, white rose, anise, smoke, fresh herbs and earth. Very dry, rich and thick, but with a remarkably sappy, penetrating quality to its citrus and floral flavors. The extremely slow-building, edge-free finish stains the palate with licorice and menthol. Utterly distinctive grand cru Chablis–but then this bottling has been consistently stunning since its inaugural 2012 vintage.”

Thomas Pico Domaine Pattes Loup Chablis 2020 750ml Displayed Price: $46, that’s $43.70 at 5% off and $41.40 at 10% off, 12 bottles in stock now
Neal Martin-Vinous 90 points “The 2020 Chablis Vent d’Ange has a light bouquet with lemon verbena, and citrus peel touches, just slightly smudged at first but gaining clarity with aeration. The palate is well-balanced with a slightly reduced entry, fine depth, plenty of extract, and a saline finish. Moderate length. Just a hint of blackcurrant leaf on the finish. Fine.”
Domaine Vocoret et Fils Blanchot, Chablis Grand Cru 2022 750ml Displayed Price: $79, that’s $75.05 at 5% off and $71.10 at 10% off, 13 bottles in stock now
Winery note “Floral, dense and infused with white flowers and minerality. Ripe and warming tones come from this intensely fused, generous on the palate.”

Domaine Vocoret et Fils Vaudesir, Chablis Grand Cru 2022 750ml Displayed Price: $79, that’s $75.05 at 5% off and $71.10 at 10% off, 13 bottles in stock now
Winery note “Shy nose of citrus and green fruit. The Kimmeridgian (limestone-rich) soils that run through Chablis give the wines their characteristic minerality. This wine has a round and vibrant middle weight with a lingering, lemony finish. Full structure may take years to develop. All grands crus wines are fermented entirely in oak puncheons.”
Domaine Vocoret et Fils Valmur, Chablis Grand Cru 2022 750ml Displayed Price: $79, that’s $75.05 at 5% off and $71.10 at 10% off, 12 bottles in stock now
Winery note “Floral and fruity and citrus laced with minerality. A classic Chablis with rich, powerful and concentrated lemon-lime, crisp green apple and Bartlett pear flavors followed by wet-stone minerality. The grand crus wines are fermented entirely in oak puncheons for 8 to 10 months.”
