Pierre Bouree et Fils might not be a household name in the USA, but it is one of the many historic producers headquartered in the venerable village of Gevrey-Chambertin. The estate dates back to the mid-19th century. More recently, Pierre Bouree has grown its profile through shrewd purchases, including the acquisition of Clos de la Justice (a monopole), as well as a small plot within the Premier Cru vineyard Les Champeaux.
Currently run by Brothers Bernard and Jean-Christophe Vallet, intervention in the vineyard is limited to pruning in the spring and organic compost for fertilizer. Just like their cult neighbor Domaine Dujac, the reds are vinified entirely with whole clusters in foudre and raised in oak for two years. New oak is only used to retire barrels too old for production, allowing for the full character of their winemaking practices to be seen.
Fiercely traditional in approach, Bourée’s wines are a throwback to a time when cellaring was an expectation, not a luxury. These are not wines intended for early drinking. Instead, they reward patience, something of a lost art in today’s purchase and pop wine culture. With adequate time Bourée’s wines evolve from rustic and esoteric, to silky and timeless. Think something akin to Rousseau, but vinified by Dujac, if perhaps a little less concentrated. These are wines for an unabashed Burgundian palate.

Producer Note “The nose offers up (after a bit of swirling) notes of red and black cherries, grilled meats, dark soil tones, cocoa and a smoky topnote. “Equally interesting is their small plot of Gevrey-Chambertin 1er Cru Les Champeaux; this is at the northern extreme of Gevrey, with very stony and often terraced ground, typically a little cooler here than for the rest of Gevrey’s 1er crus. Their 2 ouvrées (see picture above) is in a depression, completely (save for one small gap where a gate might be appropriate) enclosed by dry-stone walls of up-to 2 metres high. This has the effect of creating a tiny, warmer microclimate vs surrounding vineyards – the wind simply blows over the top. The only negative for the domaine is that it is impossible to get any machinery into this plot, hence, this is the one vineyard where they spray against weeds. Given it’s position, the family are actively considering if some special designation (eg Clos de Champeaux) could be agreed with the authorities – maybe even a monopole badge.” -Burgundy Report
