His determination and drive to make the best possible wines has made him a towering figure in the Mosel, with an impressive, modern winery and holdings in almost every important vineyard in the region. This drive also means there are a lot of different bottlings—Molitor believes that every single sub-parcel and selective pick should be vinified to its utmost potential.
Most winemakers would pick a vineyard once or twice and vinify the lots together—it’s easier and the wines are good. Molitor, though, asks what each parcel and pick would be like on its own—treated as if it were a wine of distinction rather than a blending component. This is a lot of extra work and requires time and space that most winemakers would rather not spend, but the result is a dizzying number of bottlings that all strive toward perfection.

The palate is medium-bodied with a slightly grainy entry. This is showing the oak a little more than the Vieilles Vignes at the moment, but there is sufficient concentration to absorb that with time. Winery note “Deep ruby color with light garnet hues. Finesse and elegance on the nose, with aromas of small red ripe fruits, exotic spices and violets, with a touch of minerality. The palate is full and round, with a generous finish. Delicate and velvety tannins, with nice acidity and length on the finish. The Volnay appellation is found mid-slope in the Côte de Beaune, with Pommard to the north and Meursault to the south. Although there are no Grands Crus here, Volnay’s 30 Premiers Crus are unmatched. Always appreciated for their finesse and beautiful bouquet, Volnays are often regarded as being feminine. The vines for this cuvée are on average 45 years old. This square shaped, “carré = Carelle”, vineyard is located just below the beautiful 16th century chapel of Volnay.”

Bevan Cellars has quickly emerged as one of the top handful of Napa Cabernet producers in a crowded marketplace. Since their founding in 2005 as the personal project of star winemaker Russell Bevan, they’ve earned multiple 100-point scores for their bold, silky style.
These are intense expressions of Cabernet (and a few impressive Cabernet-based blends) that manage to be delicious and texturally impressive now. It’s exceptionally rare to find wines of this quality which are easy to drink right away, which is part of the reason Bevan Cellars has a long waiting list to buy their wines direct.

Just a little more subdued than when I last tasted it, the nose features gorgeous blueberry pie, molten chocolate, plum preserves and mulberries notions with hints of camphor, cloves, earth and cigar box. Full-bodied and voluptuously endowed, with decadently velvet-textured tannins, the acid sits perfectly balanced in the background, finishing with epic length and so many layers. The way this is headed, I would not be surprised if it emerges in a few years hitting glorious, three-digit perfection. 1,403 cases were made.”
