Despite the many changes that Italian winemaking has seen over the past century, Felsina is still deeply rooted in the traditions of Tuscany. Their winemaking explores the distinct characteristics of the sangiovese grape while emphasizing sustainable agriculture and biodivesity. Their vineyards feature olives and sorghum alongside grapes in addition to livestock they raise such as goats, hens, quail, ducks, and guinea fowl.
Since 1983, they have been focused on preserving Chianti’s viticultural heritage via careful massale selection. As the winery says, “The cultural-agricultural choice to produce Sangiovese is not only ideological, but justified by knowledge gained through in-depth work experience and experimentation, in which the pairing of vine and terrain is a critical requirement.” Eschewing market trends, they still use 100% sangiovese in their wines, including their highly prasied IGT release Fontalloro.

This wine is a family affair. In 1997 two fourth generation growers from the Côte des Blancs, Stéphanie Hubert and Olivier Waris, were married. They merged their estates together to create the Waris-Hubert estate, with vineyards in the villages of Avize, Oger, Cramant, Chouilly and Aÿ, all classified “Grand Cru.”

On the palate the wine is pure, full-bodied, bright and very, very deep, with great focus and grip, a very long, perfectly balanced and nascently complex finish. This will of course be approachable from the moment that it is released, but I would strongly suggest giving it at least four or five years in the cellar to allow it to start to really blossom and show some of the secondary layers of complexity that will come with bottle age. 2016-2075+.”

The botrytis gives the wine a great exotic, luscious and unctuous texture with plenty of juice, creamy viscosity and smoothness on the palate. The wine is, of course, still very sweet at this stage (it has no less than 229 g/l of residual sugar), but the interplay with some gorgeously playful acidity makes for a superbly clean and focused feel in the long finish. The only drawback of this little masterpiece of a BA is that it is still a good decade away from maturity. Patience is required! 2030-2085.”
